On May 24th at 12.30 before the MADness begins, two culinary minds go back to the roots – and to the flames.
Join Søren Ejlersen and Karlos Ponte for a long-table lunch cooked over open fire in the wild gardens of BaneGaarden, Copenhagen’s green hideaway tucked between train tracks and urban life.
This one-off collaboration brings together two old friends of the project:
Søren is one of BaneGaarden’s co-founders, widely recognized for co-creating Aarstiderne and pioneering regenerative food systems in Denmark. Karlos is a Venezuelan-Danish flavor poet – trained at elBulli, sharpened at Noma, and known for the cult Copenhagen restaurant Taller. Today, he’s the culinary force behind NOON and partner at BaneGaarden.
The lunch will be all about fire, feeling and flavor. Five servings designed for sharing – thoughtful, joyful, unpolished. A sensory prelude to the Symposium, wrapped in woodsmoke and wild herbs.
